Анотація

This study evaluates the environmental and technological aspects of green extraction of chitin, chitosan, and chitin–glucan complexes from fungal biomass. Key metrics including E-factor, PMI, and water footprint were analyzed. The results indicate that chitin–glucan complexes and intensified processing methods provide the most resource-efficient approach.
