Анотація

This research analyzes the effect of apple pectin as the primary carbon source on the growth of Limosilactobacillus fermentum LF-02. Compared to glucose, apple pectin marginally inhibited bacterial growth and resulted in a slightly higher final pH, indicating reduced acidification activity.
