These theses are devoted to the analysis of the limitations of classical in vitro models used to assess the hypocholesterolemic activity of probiotic LAB. Particular attention is given to discrepancies between in vitro and in vivo results, which arise from the incomplete consideration of cholesterol-lowering mechanisms, interactions with the intestinal microbiota, and methodological limitations.
